It might also be good to tell people that the writing center will
help them with designing writing assignments, with syllabi, with
promotional materials for their campus (program brochures or catalog copy
or recruitment letters or what have you), and with other types of
job-related writing (resumes?). I bet people will feel far more willing
to show those materials to others than they would to show a
work-in-progress.
And I think the writing center ought to be "stocked" with clients
. . . People walking by will be impressed to see others using the center,
and if at first it's just writing center folks helping writing center
folks, who cares? Not like anyone'll recognize us from the Internet . . .
